Ellie’s Pumpkin Bread
My middle daughter, Ellie, has always loved baking. Years ago, when she was just 11 years old, she learned how to make white bread. She would often take fresh, warm loaves to friends and neighbors. Soon, she was asked to bake bread for our church congregation’s weekly communion. It was something she looked forward to each week.
News soon spread of her delicious bread and she began to get requests for her scrumptious creations. Soon, she started a small bread selling business. In no time she was quite successful and amassed a large clientele. She sent out weekly emails to solicit orders and then baked on Thursdays to deliver the following day.
Of all the breads she baked and sold, pumpkin bread was hands down her most popular and highest selling bread. It was a specialty bread that she reserved for Fall holidays and it is indeed extra special. With Halloween coming up, what better time to bake this tasty treat? Pumpkin Bread (Cake)
Notes
This recipe can also be modified to be made as a sheet cake. Simply grease and flour a 12x17 cookie sheet and bake for 30 minutes, or until knife comes out clean.
Ingredients
Pumpkin Bread
- 4 eggs
- 1 cup oil
- 2 cups canned pumpkin
- ⅔ cup water
- 1 ½ tsp salt
- 2 tsp baking soda
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1 tsp ground allspice
- 3 cups sugar
- 2 cups flour
Frosting
- 1 ¾ cups powdered sugar
- ½ tsp vanilla
- ½ tsp cinnamon
- 2 T milk
- ¼ cup melted butter
Instructions
Pumpkin Bread
- Preheat oven to 350 degrees. Grease and flour 2 large bread pans (or several smaller ones).
- Beat together: eggs, oil, pumpkin and water until smooth.
- Add dry ingredients: salt, baking soda, nutmeg, cinnamon, allspice, sugar and flour.
- Pour batter into the prepared pans
- Bake at 350 degrees for 45-60 minutes (until knife inserted into center comes out clean).
- Once the bread is done, place it in the pan on a cooling rack to fully cool.
- When bread is cool, use a knife to remove it from the pan by cutting the edges away from the pan and turning it upside down to gently remove. You may have to tap the bottom to get it to separate. Place it on a plate to frost.
Frosting
- In a bowl, combine the powdered sugar, vanilla, cinnamon, milk and melted butter and stir with a spoon.
- Frosting will be thick, but runny.
- Pour on the bread and spread.
- Frosting wll harden and form crust in a few minutes.
